In a shaker with ice, mix together:

  • 3 ounces silver tequila (or your favorite)
  • 2 ounces fresh lime juice (or lemon if you must)
  • 1 ounce agave nectar

Strain and pour into the salt-rimmed glasses.  This can also be made as a delicious blended drink, but do not use too much ice.

Skinny Girl Margarita

The Skinny Girl Margarita was made famous by Bethenny Frankel on the Real Housewives of New York television show, intended to makeover the 500-calorie margarita we have come to know and (perhaps) love at the standard Mexican restaurant chain.

It actually brings us back to roots of this exquisite Mexican cocktail, which had been transformed by the American sweet-tooth into something more like a high-calorie, sickly-green, super-sweet slurpee.

This margarita drink is much closer to the sublime drink that originated in Mexico (could it have been near the town of Tequila?) in the early 1900’s.  It has just three ingredients (tequila, lime juice and agave nectar) in a 3-2-1 ratio.

Tequila has had, in the past, a reputation as a harsh liquor that went down hard.  While there are certainly harsh tequilas, there are also fine, smooth tequilas that have recently gained in popularity as top-shelf bottles in the United States. With hundreds to choose from, it helps to learn a little bit Toolsabout the different kinds of tequila.

Tequila is either 100% blue agave, or mixed.  Blanco, (or white or silver) tequila is made from 100% blue agave, whereas gold tequila is usually “mixed”, with just over half blue agave, and the balance being different sugars and other additives like glycerin and caramel coloring.  The gold (or oro) is usually what you find in mixed drinks at your favorite bar.

The tequilas are further categorized by age. When labeled blanco or gold, they are usually bottled immediately after distillation.  Reposado is “rested” for two to twelve months in oak barrels.  Anejo (“aged”) is aged for at least a year in small barrels.

Whiskey barrels are particularly well-liked.  Your choice of tequila is your best indicator of the smoothness  of your Skinny Girl Margarita.  While the typical, sweet, slurpee-like margarita can somewhat mask a harsh mixed tequila, you should buy a high-quality 100% agave tequila for your Skinny Girl.

This is also lower in carbohydrates than the gold variety. The aged products are often smoother.  Experiment, the choices are many.

For authentic Mexican flavor, use Mexican (also known as key) limes if you can find them.  Lemons are sometimes used, but remember, before margaritas, tequila was enjoyed with lime and a little salt. That was all.

While the familiar restaurant margarita is usually made with an orange-flavored sweetener like Cointreau, the Skinny Girl Margarita is made with agave nectar, for half the calories.  Agave nectar is undoubtedly what was used when the first margarita was born in Mexico, when Margarite wanted a little sweetener with her tequila and lime.
